Iris is located inside Salmon Eye, an iconic floating art installation in Norway’s Hardangerfjord. Accessible only by boat, the experience is designed as an expedition where the journey itself becomes part of the dining adventure. Combining elements of nature, storytelling, and gastronomy, Iris invites guests to see food in a new light.


Led by Head Chef Anika Madsen, the restaurant presents a set menu based on regional ingredients, including elements rarely seen on fine dining menus. More than a restaurant, Iris aims to create something meaningful: a reflection on the ocean, sustainability, and what the future might taste like. With its spectacular location, creative cuisine, and immersive concept, Iris offers one of the most unique dining experiences in Scandinavia.
