A decade of innovation led by chef Christopher Haatuft
Lysverket, located in the historic former Bergen Lysverker building, is one of Norway’s most acclaimed modern restaurants. Run by chef and owner Christopher Haatuft, the restaurant was awarded its first Michelin star in 2021 and celebrated its 10th anniversary in 2023. The New York Times featured Lysverket as “redefining Nordic cuisine,” and the restaurant continues to stand at the forefront of culinary innovation.
The tasting menu highlights Norway’s rich natural pantry, with a strong focus on local seafood such as handpicked scallops from diver Knut Magnus Persson. Complementing these are seasonal vegetables and dry-aged meats, paired with an extensive wine list emphasizing sustainably farmed vineyards from regions like Jura and Burgundy. Haatuft also co-founded MatTak, an initiative turning Bergen’s rooftops into urban gardens that supply local produce while addressing climate challenges.
